ABOUT ALL HOURS

From Kwame Onwuachi, one of the most important chefs in America and the visionary behind Tatiana, the New York Times #1 Restaurant in New York City, comes a new cookbook, All Hours: Crazy Good Food for Whatever, Whenever (Knopf Cooks, on sale September 22, 2026, $40). As one of the world’s top chefs, Kwame Onwuachi is always on the go; but no matter when or where he’s eating, it’s going to be good. In All Hours, he shares the recipes that keep him going 24/7, so that everyone can get a taste, even when they can’t get a table at one of his red-hot restaurants.

ABOUT CHEF KWAME ONWUACHI & FIFTH FLOOR HOSPITALITY

Fifth Floor Hospitality is the restaurant and hospitality group of James Beard Award-winning chef Kwame Onwuachi, home to Tatiana (New York, NY), Dōgon (Washington, DC), and Maroon (Las Vegas, NV). Founded in 2018, the company takes its name from Bruh-Man from the Fifth Flo’, the beloved recurring character from the classic television series Martin, a neighbor who climbed down the fire escape into Martin’s apartment, helped himself to whatever he needed, and made himself completely at home without ever waiting for an invitation. That spirit defines every Fifth Floor experience: a host who anticipates every desire, a table where you belong, and hospitality that takes care of you before you even know what you need.

Raised in New York City, Nigeria, and Louisiana, Chef Onwuachi began his culinary journey in his mother’s modest Bronx apartment and went on to train at the Culinary Institute of America before becoming one of the most celebrated culinary voices of his generation and a champion of Afro-Caribbean cuisine. Named one of Food & Wine’s Best New Chefs, Esquire’s 2019 Chef of the Year, a Forbes and Zagat 30 Under 30 honoree, a Time 100 Most Influential Person of 2025, and called the most important chef in America by the San Francisco Chronicle, he is also the author of the critically acclaimed memoir Notes from a Young Black Chef, currently being adapted into a feature film, and his newest cookbook, All Hours, set to release this September. He was selected by Anna Wintour and the Met Gala Board to curate the menu for Superfine: Tailoring Black Style in 2025, has hosted the James Beard Awards, and appears regularly on Top Chef, Chopped, Billions, and Somebody Feed Phil. Fifth Floor Hospitality is the house he built for all of it.
